Replace illegal characters (UTF-8)

Cleans and normalizes string fields by replacing or removing illegal and malformed UTF8 characters. Implemented as a preconfigured wrapper around the Apache Hop Replace in String transform with standardized regex rules to ensure consistent text sanitation across all Deem pipelines.
